The herrings have cured the traditionally way, where the herrings’ heads and tales are removed right after landing. Next they are packed into barrels with salt and spices. The herrings are kept in the barrels between 6-12 months, where the herrings cure by means of their own enzymes and take flavor from the salt and spices. This traditional curing give the herrings quite a fantastic taste. After the traditional curing is complete, the herrings are hand-trimmed and packed in glasses with various brines.
